Eternal Sunshine Drink Recipie

Dear Reader,

I’ve been tinkering with a drink recipe for a bit and I’ve gotten to the point where I like it enough to drink it on a regular basis. To preserve it so I don’t forget it it later, I’m posting it here. This drink started back when I was living in the Netherlands. I wanted a Piña colada but never could find all the ingredients. So one night I just started mixing what I had and one of the things I had was coconut rum. Four years later, I think I’ve got something that tastes pretty good.

Ingredients

  • 6oz Pineapple juice
  • 6oz Light Rum
  • 6oz Coconut Rum
  • 2oz Tripelsec
  • Orange Juice

Instructions

  1. In a container that will hold at least 24oz of liquid pour in a small (6oz) can of Pineapple juice. If you can get fresh juice, it is even better but canned will work just fine.
  2. Add to this 6oz of light Rum. You can use any light rum you like, since this is a mixed drink and the taste isn’t that important, I use the cheap stuff.
  3. Add to this 6oz of coconut flavored light rum. I use the one in the white bottle but any should do.
  4. Finally, add 2oz of triplesec.
  5. Place this mixture in the freezer and allow it to chill for about an hour. (Overnight is even better)

When you are ready to serve, take an Old Fashion glass and fill it about 1/2 full of crushed ice. Next pour enouh of the mixture over the ice to cover the ice, but just barely. Finally, add Orange Juice to taste and stir gently before enjoying.

Two warnings

  1. Too much orange juice will overpower all the other flavors. Go very easy on the OJ.
  2. The slurry in your freezer is mostly alcohol, this is a potent drink. If you make a batch of these and finish it the same night, you may want to seek counseling…or at least a comfortable position on the bathroom floor.

Oh, one final option is to shake about 2 drops of lime juice into the final mixed drink. This gives it a delightful but very light aftertaste.

Tequila Fruit Smoothies Recipe

Dear Reader,

Not that I drink a lot, but when I do, I am usually drinking with my wife, the lovely and talented Kathy. Last summer, I added a new drink to the list that she likes to drink. She does love a good Banana Banshee but that recipe is very high in fat and she’s on this health kick. So I started looking into new drinks.

Kathy loves a good strawberry margarita but again, there is a lot of sugar in margaritas so she doesn’t often drink them. Then a thought hit me, fruit is good, tequila makes everything better, why not mix the two but leave out all the artificial sugar and stuff. So, after spending no small amount of time mixing and matching fruits, I present you with the recipe for Kathy’s current favorite drink.

Banana Banshee Recipe

Dear Reader,

Not that I drink a lot but when I do, I’m usually drinking with my wife, the lovely and talented Kathy. While I like a good cosmopolitan when drinking, Kathy is not a big fan of them. Back in the day, when we were working at Disney and dating, her favorite drink was the Banana Banshee. I thought I would go find a good recipe for that so i could make them for her. To my great surprise, there weren’t any good ones out there. So I’ve taken pieces from several of them, added a bit of my own and come up with one that she would like. It’s taken a couple of weeks of experimenting but I think I’ve finally found a recipe that works.

Banana Banshee

  • 1 Jigger of Vodka
  • 1 Jigger of Banana alcohol (I use 99 Bananas)
  • 1 Jigger of Cream de Cacao (white)
  • 4 Jiggers of Half and Half
  • 1 frozen banana

Put all the ingredients in a blender and blend until smooth. I find it’s best if if slice up the banana first as it reduces the blending time and the drink stays colder. The banana gives it a great texture and cools it off so you don’t need to add any crushed ice. Don’t blend it too long or it will warm up, just enough to make it smooth and on a low speed.

This makes 2 servings, which is great because the lovely and talented Kathy usually polishes off the first one in short order. Making them 2 at a time saves me tine in the long run.
